पुणे: जांभळ्या बटाट्याची कातडी जांभळ्या रंगाची असते आणि त्याची थोडी वेगळी चव असते. दक्षिण अमेरिकेतील एका भागात आढळणारा जांभळा बटाटा भारताच्या बाजारपेठेत कमी प्रमाणात आढळतो. पण जांभळे बटाटे सुपर मार्केटमध्ये सहज उपलब्ध होतात. जांभळ्या बटाट्याचा पोत सामान्य बटाट्यासारखाच असतो, पण पौष्टिकतेचा विचार केला तर ते पांढऱ्या बटाट्यापेक्षा जास्त फायदेशीर असतात. जांभळ्या बटाट्यातील पौष्टिकतेबद्दल बोलायचे झाले तर त्यात स्टार्चचे प्रमाण कमी असते. ते खाण्याचे काय फायदे आहेत आणि ते कसे शिजवले जातात, याविषयी (Benefits of purple potato) जाणून घेऊया.

जांभळा बटाटा उच्च रक्तदाब आणि कमी रक्तदाब अशा दोन्ही प्रकारच्या रुग्णांसाठी फायदेशीर आहे. जांभळ्या बटाट्याच्या सेवनाने सिस्टोलिक रक्तदाब 3 टक्के आणि डायस्टोलिक रक्तदाब सुमारे 4 टक्के कमी होऊ शकतो.

पचन व्यवस्थित होतं –

जांभळ्या बटाट्यामध्ये पॉलिफेनॉल असतात. जे पोट निरोगी ठेवण्यास मदत करतात. यामध्ये फायबरचे प्रमाण जास्त असते. त्यामुळे आतड्यांचे आरोग्य चांगले राहते.
यकृतासाठी उपयोगी-
जांभळ्या बटाट्यामध्ये अँटी-ऑक्सिडंट्स मुबलक प्रमाणात असतात. त्यामुळे यकृत निरोगी राहते. हा बटाटा खाल्ल्याने अँटिऑक्सिडंट क्रिया वाढते, ज्यामुळे यकृतावरील चरबी कमी होते.

जांभळा बटाटा कसा खावा –
ही रेसिपी बनवण्यासाठी तुम्हाला जांभळे बटाटे, लसूण, मीठ, मिरपूड, ओवा लागेल. या सर्व गोष्टी एका भांड्यात घेऊन फोडणीच्या गोष्टींनी फोडणी द्या, नंतर त्यात हा बटाटा घाला. वेळोवेळी परतत राहा, पाणी, तिकट आपल्या चवीनुसार घाला आणि ते मऊ होईपर्यंत गॅसवर शिजवा. नंतर उशीर न करता गरमागरम सर्व्ह करा.
